Cucumber and Tomato Open Sandwich

This is one of the favorite snacks at home. Its very easy, tastes so good and most important is very satiating. I never knew about the concept of open sandwiches until this recipe was introduced to me after marriage. Open sandwiches as the name suggests are open with some toppings on top of the bread. There are hundreds of varieties of them but this one is the first and the only one I have ever tried or eaten. Try to make this one on a sunny day as the taste and the combined flavors of all the ingredients are really refreshing.

Ingredients:

1 bread loaf(white or brown)
1 bowl peeled diced Cucumber
1 bowl diced Tomato
Sev


Method:

1. Take a bread slice and spread green chutney on it.

2. Top it with diced cucumber and tomato.

3. Spread tamarind water on the slice as required.

4. Sprinkle sev.

Tips:

Both the chutneys when made ahead of time, the open sandwich is just a 4 step snack.

Indian version of Vegetable/ Vegan Toast Sandwich and an Award

                    Sandwiches are always fulfilling, healthy, tempting and easy to make. These are very common in India and a very popular street food but the home made sandwiches are always hygienic and satiating. I learned this recipe of  'Vegetable Sandwich' from my mother. I made a slight variation of adding 'chaat masala' and making toast of bread loaves which is absolutely optional. I call this a 15 minutes recipe. :). Yes, very easy and so much liked by everyone at home. The preparation just takes 15 minutes; grind the coriander chutney, slice the veggies and its done. I am making a toast of bread loaves and then a toast sandwich but you can simply skip making toast and go with a regular one.
Serving, you all know..... :)



   
Ingredients: For just 1 sandwich

2 slices of bread (white or brown)
Coriander Green Chutney
Thin slices of each Cucumber, Tomato, Onion, Baked Potato
Baby Spinach
Tomato Ketchup
Indian Chaat Masala - this is available in any Indian store or may buy it here

You will also need a toaster. (optional)



Method:

1. Take 2 slices of a bread and make toast of them in a toaster.

2. Spread green chutney evenly on one of the bread slice.

3. Then on the same slice put sliced cucumber, tomato, onion, potato pieces the way you want. Put some baby spinach leaves. You won't see those in this pictures.

4. On the other slice of bread spread tomato ketchup and sprinkle some 'chaat masala'.

5. Now put this slice on the earlier one and cut into 2 or 4 diagonal or vertical-horizontal pieces.

Tips:

Sandwich tastes great even if you add only cucumber and tomato. I added lettuce leaves once. One can also try beetroot slices. Wear the Chef hats and think of new ideas. Try it...
Some of different veggies/other ingredients which you can add are :

Lettuce leaves
Beetroot slices (blanched)
Grated paneer
Shredded and parboiled carrot

Would like to know different fillings from you gals ???

You can also put butter before applying green chutney, but it would no longer remain vegan :).
This can also be done just with regular bread loaves and not toasting them.


Vegetable Grilled Sandwich

To make grilled sandwich you can use Griller or the Grill plates which come in the sandwich maker.
To make grilled sandwich do not toast the bread. Instead prepare the sandwich with the untoasted regular bread and then apply butter on both the sides of the sandwich (above and bottom) and put it in the griller or the sandwich maker. Grill it till it turns little brown and little crisp.

This one tastes really good and different than the toasted/untoasted sandwich.

Garnish with some cheese  (no more vegan :) ).

Hyderabadi Toast

Hyderabadi toast is one of my favorite snacks. I don't know why this recipe is called Hyderabadi toast, well I never thought about that; I just enjoy making and eating it. It's simple, healthy, takes very little time, actually no cooking is at all required and adds a different taste.


Ingredients: Serves 1

2 Slices of bread
1/2 Capsicum seeded
1/2 medium size firm Tomato
1/2 medium size Onion
1 tbsp Plain yogurt (curd)
2 tsp fine Semolina (Rava)
3 tsp Cream
2 tsp Chopped Green Chili
1 tsp Salt
1-2 tsp sugar
Tomato Ketchup (Sauce)
You will also need a sandwich-maker.



Method:

1. De-seed tomato and chop capsicum, tomato, onion and add to the mixing bowl.

2.  Add yogurt, cream, semolina, chili, salt, sugar, black pepper(if you like) to the bowl and mix again. Take a slice of bread and spread this mixture over it.

3. Take other slice of bread and spread tomato ketchup on it and place this slice over the previous one from step 1

4. Now spread some butter on the outer sides of both the breads. Plug in the sandwich-maker and place this sandwich in it until the bread turns brown or becomes crispy.

Tips:

If you don't like tomato ketchup inside you can skip that step .

Broccoli-Capsicum Sandwich

Ingredients:  Recipe of 1 sandwich

2 Slices of bread
1/2 cup broccoli cut into small pieces
1/2 Capsicum
1/2 medium size Tomato
1/2 medium size Onion
1 tbsp Plain yogurt
Chopped Green Chili
1/2 tsp black pepper
1 tsp Salt
Tomato Ketchup (Sauce)
You will also need a sandwich maker.

Method:

1.  Boil broccoli pieces for 5-8 minutes. Cut capsicum, tomato, onion into very small pieces.

2. Now mix well all the above ingredients. Add yogurt, chili, salt, black pepper and mix again. Take a slice of bread and spread this mixture over it.

3. Take other slice of bread and spread tomato ketchup over it and place this slice over the other from #1

4. Now put some butter on outer sides of both the breads. Plug in the sandwich maker and place this sandwich in it and take it out after the slices turn crispy brown.

Tips:

If you don't like tomato ketchup inside you can skip that step .

Open Sandwich

Ingredients:


1 bread loaf(white or brown)
Green Chutney
1 bowl peeled diced Cucumber
1 bowl diced Tomato
Tamarind Chutney
Sev

Method:

1. Take a bread slice and spread green chutney on it.

2. Put tomato and cucumber on the slice as toppings.

3. Add some tamarind water on the slice.

4. Cover this slice with sev.
